Indian Quick Chicken Curry Recipe Ingredients:

1 teaspoon salt
1/2 teaspoon cayenne pepper
2 tablespoons flour
1/3 cup golden raisin
2 tablespoons canola oil
1 lb boneless skinless chicken breast cut into 1 1/2-inch pieces
1 tablespoon curry powder
1 medium onion sliced
1 cup chicken broth
1/4 cup plain nonfat yogurt
1 1/2 tablespoons tomato paste
1/4 cup chopped fresh cilantro
2 garlic cloves minced

Indian Quick Chicken Curry Recipe Preparation Instructions:

Mix together the flour, salt and the cayenne pepper in a plastic bag; add the chicken in small batches, shaking to coat. Heat up the oil in a large skillet over medium to high heat. Add the chicken and cook until it`s lightly browned; then add the curry powder and toss to coat. Remove it from the pan. Add onions and garlic to pan, adding a little more oil if necessary, and cook for 2 minutes. After that add broth, raisins, and the tomato paste. Put the chicken back in the pan and simmer uncovered for 8 minutes or until the chicken is cooked through and sauce is thick. Garnish it with cilantro and a dollop of yogurt. Serve it with quick cooking minute rice, if you wish.
