1/2 cup milk
1 egg beaten
1 teaspoon vanilla essence
1/4 cup oil
2 teaspoons baking powder
1/2 teaspoon salt
1 cup coconut grated
1/2 cup sugar
1 1/2 cups all-purpose flour (maida)

Beat egg in a bowl. Add milk, oil, essence and blend all well together. Stir in the dry ingredients. Mix well. Spoon into muffin pans. Bake at 356 F for 25 minutes. Remove from the oven and allow it to cool on a wire rack.
